It’s all about passion, Ive never been trained or even worked as a cook. Now when I was food running at a hotel the line would get backed up and I knew every dish so I would hop on the the line and get down! Other then that no technical training of any sort. Now coming from a real Italian family cooking is something we do. I make really good food without recipes. Dear students i believe in you i am here for you poster When people ask what I do or how I learned I justy say passion and love Food is wonderful food, but you know Tex-Mex was born for a reason. there are things that I don’t like but understand that it was way that allowed Mexican food to continue its existence in this country.

Now more Mexican dishes are accessible because ingredients are more accessible versus before ingredients were harder to obtain. More than Mexican food though its important to recognize that in Asian, French, etc. restaurants the crew is still often Mexican dudes working their asses off, at least that’s what I’ve heard from industry friends. The best cook is always Mexican from experience. And by best I mean hardest working fastest moving no bullshit best. Even if we couldn’t communicate very well they’d always have my back. Pick up everyone’s slack and stay till the kitchen was cleaned and dish pit was done.
